Our Story

Tucked behind the Chevron, worth every mile

La Escondida — "the hidden one" — started as a small red food truck parked just off US-290 West, and that's exactly where you'll still find us today. We're easy to miss if you're not looking, but the folks who find us keep coming back: for the carnitas that fall apart at the fork, the barbacoa simmered until it's soft and rich, and al pastor with that unmistakable char. Even our shredded chicken chile rellenos come out full of flavor, made the way abuela would have made them.

Since opening, we've built a following one plate at a time — travelers stopping on their way to Pedernales Falls for an authentic Mexican breakfast, regulars who stuffed themselves silly on their first visit and never looked back, and neighbors who've made our little deck their favorite sunset spot. We keep our menu focused on the classics done right: entomatadas, pollo a la mexicana, chimichangas, and warm crispy churros to finish.

We're open early for breakfast and through the afternoon, six days a week — closed Sundays so our crew can rest too. Pull off the highway, find the little truck, and taste why people call it a hidden gem.
